  What I Eat In A Day As A Holistic Nutritionist   

 

     I often fell into the trap of eating fast food when I didn’t prepare easy, quick meals in advance! I spent an unnecessary amount of money and was faced with options that weren’t very wholesome or healthy, which greatly affected my skin, not to mention my overall health. I’m excited to share how I prepare simple, delicious and wholesome meals everyday, so you can live your best life! My success in eating well honestly comes from meal prep and thinking ahead. It saves time, energy, money and unnecessary stress!

     One of my favourite recipes that I prepare for dinner and leftover lunch the next day is Chicken Adobo. I show you how to make it in the video above, but will leave the recipe below for your convenience. It's one of my favourite meals!

 

CHICKEN ADOBO

+ 1 TBSP olive oil
+ 6-8 chicken thighs, bone-in or boneless
+ 1 yellow onion, sliced

/ sauce ingredients: /
+ 1/2 cup apple cider vinegar
+ 1/4 cup each soy sauce and water
+ 4 tsp honey
+ 3 bay leaves
+ fresh ground pepper

Brown chicken in olive oil in a deep skillet over medium-high heat. Transfer chicken to a bowl, and add sliced onion to the skillet. Cook onion until lightly brown, about 3 minutes. Combine sauce ingredients and add to the onion. Bring to a boil. Return chicken and any accumulated juices to skillet. Cover and simmer over low-medium heat, turning chicken once, until chicken is no longer pink in centre, about 35 minutes. You can also cook in an oven safe dish at 350 F for 30 minutes. Discard bay leaves and serve over brown rice. Enjoy!
